The Story Behind ZOJAH Burger

Alvin Garlitos Interview

ZOJAH Burger may be known across San Antonio for its flavorful smash burgers and crispy lacy edges, but behind the grill is a story that goes far deeper than food. In a recent interview on The More You Know, The Better It Tastes podcast, founder Alvin Garlitos shared the personal journey that led to the creation of ZOJAH Burger and the mission that continues to guide the restaurant today.

Located at 9390 Huebner Road in San Antonio’s Medical Center, ZOJAH Burger has quickly become a local favorite for diners looking for high-quality smash burgers made with Certified Angus Beef, house-made sauces, and a commitment to community impact.

But the restaurant didn’t start as a traditional culinary venture. Alvin’s path into the restaurant industry began in an entirely different world.

The Story Behind ZOJAH Burger

A Career in Healthcare That Inspired a New Mission

Before opening ZOJAH Burger, Alvin spent more than 16 years working as a registered nurse, including time in the Emergency Room and hospital leadership roles. His experience in healthcare shaped the values that would later define the restaurant.

While working long hospital shifts, Alvin also pursued his passion for food by enrolling at the Culinary Institute of America (CIA) in San Antonio’s Pearl District. Balancing a full-time healthcare career while studying culinary techniques required discipline, but it also helped him refine the concept that would later become ZOJAH Burger.

His training at the CIA helped him master the techniques that make smash burgers unique, particularly the Maillard reaction, the scientific process that creates the rich flavor and crispy edges that burger lovers crave.

Why Smash Burgers Taste Different

One of the highlights of the interview is Alvin’s explanation of why smash burgers have become one of the fastest-growing trends in the burger world.

Unlike traditional thick burgers, smash burgers are cooked by pressing the patty onto a hot flat-top grill. This process creates a caramelized crust that locks in flavor.

The result is:

  • Crispy “lacy” edges

  • A juicy interior

  • Deep caramelized flavor

  • Faster cook times that preserve tenderness

At ZOJAH Burger, this technique is paired with high-quality ingredients and a simplified menu focused on consistency and flavor.

The Meaning Behind the Name ZOJAH

The name ZOJAH Burger carries a personal story that reflects Alvin’s commitment to family.

The name combines the first letters of his three children’s names:

  • Zoe

  • Elijah

  • Isaiah

This tribute serves as a daily reminder of the legacy he hopes to build—not just as a business owner, but as a father and community member.

A Restaurant Built on Purpose

While many restaurants focus solely on food and profit, ZOJAH Burger was created with a broader purpose.

After Alvin’s mother passed away from cancer in 2021, he saw firsthand how medical emergencies can place enormous emotional and financial stress on families. That experience became the foundation for the ZOJAH Way, the restaurant’s commitment to supporting the community.

Today, ZOJAH Burger donates 10% of all profits back to the San Antonio community, helping organizations that support:

  • Pediatric cancer patients

  • Local schools and youth programs

  • Families facing high medical co-pays

  • Community support initiatives

This approach has helped ZOJAH Burger build strong relationships with local residents who appreciate businesses that give back.

Finding the Perfect Location in San Antonio

Another key part of the story discussed in the interview is the importance of choosing the right location.

In the restaurant industry, finding a property with a drive-through and high visibility is extremely difficult. Alvin describes these locations as “unicorn” properties because of their rarity.

After waiting patiently for the right opportunity, he secured a location in San Antonio’s Medical Center district, an area that serves thousands of healthcare workers, students, and families every day.

This location provides easy access for:

  • Medical Center professionals

  • Nearby residents

  • Students from UTSA

  • Visitors across northwest San Antonio

Building a Business While Working Full-Time

Another interesting aspect of Alvin’s story is how ZOJAH Burger was launched while he continued working in healthcare.

Instead of trying to manage every aspect of the restaurant himself, he focused on building a strong leadership team that could run day-to-day operations.

This strategy allowed him to:

  • Maintain his hospital leadership role

  • Build the restaurant gradually

  • Focus on long-term growth

  • Avoid unnecessary financial risk

For entrepreneurs listening to the interview, Alvin shares a simple but powerful lesson: start with what you have and grow carefully.

A Focused Menu Designed for Quality

Another strategic decision Alvin discusses is the importance of keeping the menu simple.

Rather than offering dozens of items, ZOJAH Burger focuses on a small selection of core favorites:

  • Smash burgers

  • Chicken sandwiches

  • Fries and sides

  • Milkshakes

This streamlined menu allows the restaurant to maintain consistent quality while preparing for potential expansion in the future.

The jalapeño smash burger is amazing. The use of fresh sliced jalapeños works perfectly. The bean burger was awesome as well.

I tried the smash burger with fries at Zojah Burgers in San Antonio and here’s my honest take: The burger looked a little over-charred at first and felt small for the $20 price, but the flavor grew on me. The bun was incredibly soft and buttery, almost like a brioche, and the pickles were crisp with a great crunch. The grilled onions were sweet and not overpowering, and their house sauce (a mix of mayo, ketchup, and Worcestershire) really helped balance the extra char on the patty. The real standout was the fries fried in beef tallow crispy all the way around, soft inside, and super flavorful without being greasy. I left feeling satisfied but not bloated, which I appreciated. Even though the price is high, the food felt clean and fresh, so I’d definitely treat myself here once every month or two. Overall: Great quality ingredients, amazing fries, slightly pricey, but worth to treat your self.

I picked up some food from this place last week and I have nothing but good things to say. We ordered a couple of burgers, fries, and a shake. Everything was delicious. I don't usually like crinkle cut fries but their fries were so damn good. My wife is a chef and were both always so busy, so we eat a lot of take out. But I hate doing it because she always finds something wrong with the food. My wife thought everything was perfect. The fries were perfectly crispy and seasoned. The burgers were perfectly cooked and seasoned. It was a great experience. Wife and I will absolutely go back. The only thing I'd complain about is the parking. The parking sucks, but what can you do. I won't let some unfortunate parking situation prevent me from getting some bad ass food. Keep up the great work guys! We're rooting for you! #SupportSmallBusiness
