A Career in Healthcare That Inspired a New Mission
Before opening ZOJAH Burger, Alvin spent more than 16 years working as a registered nurse, including time in the Emergency Room and hospital leadership roles. His experience in healthcare shaped the values that would later define the restaurant.
While working long hospital shifts, Alvin also pursued his passion for food by enrolling at the Culinary Institute of America (CIA) in San Antonio’s Pearl District. Balancing a full-time healthcare career while studying culinary techniques required discipline, but it also helped him refine the concept that would later become ZOJAH Burger.
His training at the CIA helped him master the techniques that make smash burgers unique, particularly the Maillard reaction, the scientific process that creates the rich flavor and crispy edges that burger lovers crave.
Why Smash Burgers Taste Different
One of the highlights of the interview is Alvin’s explanation of why smash burgers have become one of the fastest-growing trends in the burger world.

After Alvin’s mother passed away from cancer in 2021, he saw firsthand how medical emergencies can place enormous emotional and financial stress on families. That experience became the foundation for the ZOJAH Way, the restaurant’s commitment to supporting the community.
Today, ZOJAH Burger donates 10% of all profits back to the San Antonio community, helping organizations that support:

I picked up some food from this place last week and I have nothing but good things to say. We ordered a couple of burgers, fries, and a shake. Everything was delicious. I don't usually like crinkle cut fries but their fries were so damn good. My wife is a chef and were both always so busy, so we eat a lot of take out. But I hate doing it because she always finds something wrong with the food. My wife thought everything was perfect. The fries were perfectly crispy and seasoned. The burgers were perfectly cooked and seasoned. It was a great experience. Wife and I will absolutely go back. The only thing I'd complain about is the parking. The parking sucks, but what can you do. I won't let some unfortunate parking situation prevent me from getting some bad ass food. Keep up the great work guys!
